Strawberry Shortcake. YUM!!!!!

Summer fun eats. 

Strawberries are in season and so is Strawberry Shortcake.  I was in the grocery store and they had all the ingredients for this seasonal traditional.  There is a couple of things that I don't like about what they sell in the grocery store.    For me, it's about equal flavor and density.  Angel food cake is just too light next to the density of the strawberries and the whipped cream is too airy to hold up next to the strawberries and glaze.  The strawberry glaze overpowers the angel food cake and cream. 

I have seen strawberry short cake made many different ways.  for example, some use biscuits, pancakes or angel food cake.  I like it made with a nice butter or vanilla pound cake. I like it when everything holds up with a nice blend of flavors.  

Shortcake is a European invention that goes back at least to the late 1500's.  Strawberries have been around more than 2000 years, but records that show that ancient Rome, enjoyed them.  Putting strawberries and shortcake together seems to be more of a United States tradition.  The tradition dates back as far as 1850 and made out of a light flakey biscuit. .

I made a strawberry shortcake yesterday that was delicious.  I used a moist vanilla pound cake.  For the filling I used, fresh strawberries and a can of strawberry pie filling.  For the whipped cream,  I combined whipping cream and mascarpone cream with  powdered sugar.  Adding the mascarpone cream gave the whipping cream a little more body and holds up better with the strawberry glaze.  . 

Ingredients:

1 - vanilla or butter pound cake
12 - strawberries
1- pint of whipping cream
8 oz. of mascarpone cheese
1/4 cup of powdered sugar

Step one.... clean and slice strawberries.  Put to the side.
Seep two.... whip whipping cream until stiff.  Add mascarpone cheese and powdered sugar, then whip for one additional minute. 

Step three.....How to assemble

Put the pound cake on the bottom of a dish or layer in a bowl for a large party size.  Put the strawberry pie filling on top of the cake.  put some fresh strawberries on top of the pie filling.  Add the whipped cream on top of the fresh strawberries.  repeat process one more time for individual servings or continue until your party size bowl in full.  Add a whole strawberry to the top.  Makes 8 servings.
